云南永德12个茶山茶叶品质特征初探

摘要


以云南临沧市永德县12个茶山茶样为材料,通过理化成分显著性分析和感官审评,研究分析其品质特征.结果表明:永德12个茶山茶样理化成分具有显著性差异,并且各茶山感官审评结果不尽相同.12个茶山中,以大雪山地区茶样内含物质最为丰富,而木瓜寨茶样内含物质含量相对最低;结合感官审评的结果发现,内含成分与茶样品质呈正相关;结合12个茶山茶园状况,生态环境及茶叶品种是影响茶样品质特征的因素之一.分析结果表明,永德12个茶山的普洱茶品质均较优,均具备生产优质普洱茶的条件. This research uses the teas from Twelve-Tea Mountains of Yongde County in Yunnan province as the samples, and their quality characteristics were studied. Through the physical and chemical analysis and sensory evaluation, it concludes that the samples have significantly physical and chemical differences, as well as some sensory differences. The tea from the Big Snowmountain area is the richest in chemical ingredients but its Muguazhai is less. The results of sensory analysis showed that the contents of these teas have a positive correlation with their qualities. The geographical and ecological conditions and tea varieties have impacts on the tea qualities and the Pu-erh teas from TwelveTea Mountains of Yongde County have a fairly good quality due to the favorable geographical and ecological conditions.
